    This is a gorgeous Barazushi (a type of sushi) made by piling up vinegared rice and flavoured minced mackerel flakes in two layers and then topping it with other colorful ingredients.

    Barazushi is a local dish that has been handed down generation after generation in a part of the Tango region of Kyoto.

    Traditionally, it is made and served at home when people gather for festivals and celebrations.
