Founded in 1901, Doi Shibazuke Honpo opened a teahouse in Kyoto’s gateway to specialize in pickled vegetables offered at its main shop in Ohara. Delightful offerings include Shibazuke and other seasonal pickled vegetables, Spanish mackerel and salmon pickled in saikyo miso, showcasing the shop’s pickling technique, as well as freshly cooked rice steamed in a traditional kamado stove.
